happy tuesday! i hope everyone had a fabulous weekend and monday. my sister gave me this recipe a few weeks back and after buying oreos last monday and then proceeding to eat most of them throughout the week i finally made the cookies on saturday (after lying by the pool and then going to buy more oreos to replace the ones i ate). let me warn you these cookies are as sweet and decadent as they sound, eating more than two could cause serious sugar coma : ) sound perfect right? enjoy!
2 sticks (1 cup) softened butter
3/4 cup packed light brown sugar
1 cup granulated sugar
2 large eggs
1 tablespoon pure vanilla extract
3 1/2 cups flour
1 tsp salt
1 tsp baking soda
10 oz bag chocolate chips
1 pkg. oreo cookies
1. Preheat oven to 350 degrees. Cream together butter and sugars using mixer until well combined. Beat in vanilla and eggs.
2. In a separate bowl mix the flour, salt and baking soda. Slowly add to wet ingredients along with chocolate chips until just combined. Using a cookie scoop take one scoop of cookie dough and place on top of an Oreo Cookie. Take another scoop of dough and place on bottom of Oreo cookie. Seal edges together by pressing and cupping in hand until Oreo cookie is enclosed with dough. Place onto a parchment lined baking sheet and bake cookies 9-13 minutes or until golden brown. Let cool for 5 minutes before transferring to cooling rack.
Yields a 16- 24 cookies (depending on size)
