{recipe} pumpkin spice chocolate chip bread.

happy friday! why is it that one day you wake up and it is light out and then it seems like the next morning it is pitch black at 6 am? it makes me want to curl back up in bed and never leave. if it didn't feel like fall yet, it sure does now, all i can think about is how i am going to make my pumpkin seeds this year (once we carving our pumpkins on saturday) and what type of pumpkin treats i want to bake. the latest deliciousness i baked was pumpkin spice chocolate chip bread, it lasted about 24 hours, which translates into it was amazing! it is perfect for fall weather, a cozy blanket and a cup of tea! enjoy!

this weekend in the spirit of halloween we are attending a pumpkin carving party which has turned into a competition. i have no artistic ability, my sister got that gene, so i am depending on matt to bring home the victory for us! last year he carved an unbelievable pumpkin, free hand (the rest of us depended on stencils).

we have also been knocking off some wedding items on our to do list, including booking our honeymoon! but more on that on wednesday!

 

Pumpkin Spice Chocolate Chip Bread.
Yields: 1 amazing loaf

Ingredients
1 1/2 cup granulated sugar
1/2 cup vegatable oil
2 large eggs
1/2 cup or 8 ounces puree pumpkin
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon baking powder
1/4 teaspoon ground cloves
1/4 teaspoon all-spice
1/4 cup water
1/2 cup semi-sweet chocolate chips
 
Directions
1. Preheat oven to 350 degree F.
 
2. In a large bowl, combine sugar, oil and eggs. Add pumpkin and mix well. 

3. In a separate bowl combine dry ingredients (flour, baking soda, baking powder, cinnamon, salt, nutmeg, cloves and allspice).

4. Add the pumpkin mixture to the bowl of dry ingredients, alternately with water, until combined.
 
5. Pour mixture into one greased 9 by 5 inch loaf pan.
 
6. Bake for 60-65 minutes or until bread tests done.
