yesterday, we had a great time hanging out with friends and eating lots of amazing food made my a few of my favorite ladies. and to my shock i managed to get the place cleaned up and still manage to crawl into bed before 10:30. it was a good night!
the super bowl gave me an excuse to try out a new pulled pork recipe, which was a hit. matt prefers vinegar based pulled pork and was not a fan of my past recipes (even though i always thought they were amazing) so when i came across this over at what's gabby cooking i knew i had to try it out. enjoy!
Pulled Pork Sliders.
Serves: 12-14 sliders.
Ingredients
2 1/2 lbs pork tenderloin
1 medium onion chopped
1/2 cup ketchup
1/3 cup apple cider vinegar
1/4 cup packed dark brown sugar
2 tablespoons paprika
1/4 cup tomato paste
2 tablespoons worcestershire sauce
3 teaspoons salt
3 teaspoons black pepper
12 slider buns
Directions
1. Combine all the ingredients except the pork tenderloin and the buns in a slow cooker and mix together with a spoon. Add the 2 pieces of pork and cover the slow cooker. Set for 8 hours on low.
2. After 8 hours, using 2 forks, shred the pork and remove the pork with the remaining sauce into a large bowl. Toast the slider buns and add some of the pulled pork to each bun.
tips: i opted to leaving my pulled pork in the crock pot and switched the crock pot to warm and put it out on our table with the rest of the food. i presliced all the rolls and let guests help themselves! it is literally that easy. i love a good crock pot recipe!
