{recipe} chocolate chip coconut oatmeal cookies.

how was everyone's weekend? i hope everyone survived the insanely hot heat that swept the east coast. we were pretty busy this weekend, celebrating my FIL birthday and going to a concert yesterday. life hasn't slowed down post wedding, and we have been busy making some life changing decisions over here (but more on that another time). 

i did manage to spend my friday at the social security office and then at the dmv officially changing my name. lots of waiting in lines, paperwork, and one terrible license photo later the process has officially begun. now i just need to notify everyone and their cousin of my new name status.... fun times.

on more exciting fronts.... i did finally make some time early saturday morning to bake my heart out. all and all it was a fantastically exhausting weekend. i am looking forward to this week, to plow through my "to do" list.

Chocolate Chip Coconut Oatmeal Cookies.

Yields: Roughly 3 dozen cookies.

Ingredients
1 1/4 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup unsalted butter
1 egg
1/2 teaspoon coconut extract
1 cup oats, old fashion
1 cup shredded coconut
1 cup semi-sweet chocolate chips
 
Directions
1. Preheat oven to 350. Sift together flour, baking powder, baking soda, cinnamon and salt into a bowl.  

2. Cream together sugars and butter with a mixer. Add egg and coconut extract and beat until smooth, about 2 minutes.
 
3. Slowly add in flour mixture. Once combined, stir in oats and coconut. Add in chocolate chips. Continue to mix until completed combined.
 
4. Shape to form 1 inch balls. Place on ungreased cookie sheet about 2 inches apart and bake 11 minutes or until tops are golden.
 
5. Let cool on cookie sheet for a few minutes, before transferring to cooling rack to cool completely.
